Last Hurrah! Saying Adios to Summer in Style

I've never been good at goodbyes. Beaches and public pools are closing for the season, and everyone will be laying aside their swim trunks to start thinking about fall wardrobes. While I'm looking forward to the crisp, fall days ahead, summer is still with me in spirit... And what could be better than one last hurrah to celebrate the warm, colorful days of one of the happiest, most carefree times of year.

For today's Labor Day fling, I grabbed simple frozen Gardein chick'n cutlets, stocked up on cerveza and helped to throw a Mexican-syle BBQ. The recipe below is adapted for a regular family meal, but can be tripled and served along with chips and guac à la my Labor Day party. Using Gardein makes this meal quick, easy and accessible—perfect for a mixed-company BBQ, and a great way to introduce non-vegans/vegetarians to an incredible meatless sandwich.
